Salads are combinations of almost anything fresh

BEETROOT & APPLE SALAD

INGREDIENTS

6 beets (cooked, peeled & grated)
1 onion (chopped fine)
2 apples (peeled & grated) (wash in lemon water to keep from browning)
½ cup sugar (brown)
½ cup wine vinegar

SEASONING

1 tsp pepper (black)

DIRECTIONS

MIX beets, onions & apples in large bowl
ADD sugar, vinegar & seasoning
TOSS ingredients together
CHILL & SERVE

CUCUMBER SALAD

INGREDIENTS

1 cucumber (seeded & sliced in half rounds)
1 yellow pepper (sliced)
1 red pepper (sliced)
1 onion (sliced fine)
2 tomatoes (seeded & sliced in wedges)

DRESSING

4 tbs oil (olive)
1 tsp lemon juice
2 cloves garlic (crushed)
1 tsp parsley (chopped fine)
¼ chili (chopped fine) 
1 tsp pepper (black)

DIRECTIONS

MIX oil, lemon juice and seasonings in a small bowl
MIX vegetables in a large bowl
ADD oil mixture to vegetable mixture and toss well
CHILL & SERVE
