Soups warm the soul

SEAFOOD BOUILLON

INGREDIENTS

4 tbs Oil (olive)
1 large Onion (chopped fine)
2 stalks Celery (with leaves – chopped)
1 can Tomatoes (chopped)
1 cup Tomato sauce
8 cups Water
1 small Fish filet (any fish will do - cubed)
1 bag Fruit de mer mix (frozen)

SEASONING

1 tbs Garlic (crushed)
2 tsp Herbes de Provence
2 tsp Basil
4 Bay leaves
2 tbs Bouillon (chicken)
2 tbs Bouillon (shrimp or fish)

DIRECTIONS

SAUTE onions & celery in oil until soft
ADD water & seafood
ADD seasonings
MIX well
BRING to a boil, REDUCE heat and SIMMER until ready to serve



SUMMER SQUASH SOUP

INGREDIENTS

3 yellow squash (sliced round)
3 green squash (sliced round)
1 onion (chopped small)
3 tomatoes (plum, chopped small)
2 cups sour cream
8 cups water (or more, to taste)

SEASONING

½ cup chicken bouillon
1 tsp pepper (black)
1 tbs herbes de province (or Italian seasoning)

DIRECTIONS

PUT all ingredients in soup pot
BRING pot to a boil, REDUCE heat and SIMMER until ready to serve

NOTE: For all recipes, use bouillion that is unsalted and without MSG.
